ONE SALAD – TWO DRESSINGS


SPRING MIX or any mixture of greens

Cukes – thinly sliced

Scallions – thinly sliced

Tiny tomatoes

Toasted walnuts 


Blue Cheese Dressing

¼ cup mayo (I used fat free)
¼ cup sour cream (I used light)
bunch of finely chopped chives
1 cup crumbled blue cheese (I used gorgonzola)
1 Tbsp fresh lemon juice
S & P
A few spoonfuls of milk to make a creamy dressing

Italian Dressing

½ cup vinegar (I used Tanya’s Garlic/Thyme) – bet balsamic would be good or rice wine
1 or 2 shallots minced
1 Tbsp Dijon mustard
S & P
¾ to 1 cup of olive oil (I used Tanya’s Italian Dipping Oil)
